A hole-in-the-wall,
entirely on purpose.

Seventeen seats. One kitchen. One shared rolling pin, and a wall of regulars who order the same thing every week.

Han's began the way most good noodle shops do — with an apprenticeship. Years of mornings spent folding under a master's eye, learning that a wrapper is thin in the middle and thick at the pleat, that broth is patience and nothing else, that eighteen folds is the number and seventeen is lazy.

When we opened in Carrollton, we kept the small room on purpose. A small room means everything gets made the day you eat it: dough mixed in the morning, beef shank in the pot before the door unlocks, noodles cut when you order them.

No fusion, no shortcuts, no truffle anything. Just the Shanghainese and Northern classics done properly, for about the price of a sandwich.

How a day here goes

7:00 AM

Dough & broth

Flour goes in the mixer, beef shank goes in the pot. Neither is rushed.

9:30 AM

Folding hour

Xiaolongbao, shumai, dumplings — pleated by hand, tray after tray.

11:00 AM

Doors open

The steamer lids come off and the room fogs up. This is the good part.

9:00 PM

Sold out, mostly

Nothing carries over to tomorrow. Tomorrow gets its own dough.

Come sit down — or take it to go.
